Pasteurization is a heat-treatment method applied in high-technology closed systems to eliminate health risks due to pathogenic microorganisms in raw milk. Pasteurization is carried out by keeping the milk at 72°C for at least 15 seconds. This temperature and duration are scientifically determined to kill off all pathogenic bacteria in raw milk, while protecting the nutritional value of the milk.
